THINK PINK: Best of June

#thinkpinkthinkbigmoments

June was an eventful month of great discomfort. You see, everything in the blogosphere is not always as perfect as it seems. This month involved lots of back pain and medicine, an MRI, several visits to the doctor, stressful and disappointing meetings, unexpected news. With that said, even though June was not good with me, there were little pleasures in my everyday life that made me "think pink". Here we go with another round up. I hope that you will enoy it and that you all have a wonderful July!

1. RECIPE: Making this WatermelonSalad with Greek Aroma was a sweet summertime throwback to my childhood.

2. FILM / TV SERIES: Having an outdoor movie date accompanied by popcorn helps even the most mundane days. I enjoyed "The Two Faces of January" by Hossein Amini, a thriller with old-fashioned elegance and beautifully photographed Greek scenery.

3. BOOK : Oh Allan! You are such a character! I fell in love with The Hundred-Year Old Man Who Climbed Out of theWindow and Disappeared by Jonas Jonasson. This book is crying out loud to me: You are never too old to climb out of your window for a life adventure!

4. ITEM(S) OF AFFECTION: I fell hard for NARS "Laguna" bronzer, NUXE "Reve de Miel" lip balm and "Macarons & Gourmandises" French recipe book from Paris with love. What else can a girl ask for?

5. BEST / AKWARD / FUNNY MOMENT: Capturing the magical sunset hues at Halkidiki beach.

6. MY TOP RATED BLOGPOST: It was exciting to see how many of you were intrigued by the budget eye shadow quad from L’Oreal Paris for the perfect ombre eye.

THINK BIG: Books on my Nightstand

YOU ARE NEVER TOO OLD TO CLIMB OUT OF YOUR WINDOW FOR A LIFE ADVENTURE…..

This month involved many horizontal moments in bed as I have been dealing with a back pain crisis. Thinking on the bright side, I thought that this situation would allow me to become fully absorbed to my summer reading list. But, NO! I only managed to finish reading The Hundred-Year Old Man Who Climbed Out of the Window and Disappeared by Jonas Jonasson.

And I am glad  that I did, as by the end of the book I kept thinking that if Allan (the protagonist) managed to climb out of his bedroom window, into the flowerbed and make his getaway, I could as well. You see.. "This manoeuvre required a bit of effort, since Allan was one hundred years old." (p.7 )

I will go ahead and preface by saying that it is a LOVE or HATE book. To begin with, I was intrigued by its title and stunning cover design with embossed feel. It turned out a quirky, amusing, intelligent book that as I was going through its pages, I was falling in love with. An adventure novel revolving around some of the major international events of the 20th century and involving criminals, several murders, a suitcase full of cash, incompetent police, leaders, presidents, tyrants, multiple plot twists, black humour and some things out of my usual reading zone like pee-slippers (so called because men of an advanced age rarely pee further than their shoes), an atom bomb, lots of vodka and an elephant…. Most of all, I fell in love with Allan’s, the protagonist’s, strong will besides his old age, his care-free attitude to life, his enlightened, entertaining and vivacious, optimistic character "You see Benny, said Allan That’s what I mean by thinking positively. The problem immediately became a whole ton less" (p. 346), as well as his wisdom "Well, now you can see how sensible it is not to start your day by guessing what might happen, said Allan" (p. 209).

This book is crying out loud to me: It’s never too late to start over again!

THINK YUMMY: Watermelon Salad with Greek Aroma

This time of the year, I get quite nostalgic of the carefree Greek summers of my childhood, including a whole month with my 4 cousins and my sister at my grandparents’ beach house. One of the rituals of these summers was the night time family gathering around the TV for Greek films, including the consumption of big bowls of juicy watermelon with Greek feta cheese by the adults. Kids were not allowed to eat watermelon at night time, as this would result to frequent overnight visits to the one and only loo of the beach house…..

In reflection of my childhood Greek summers at my grandparents’ beach house, I decided to spice things up with a more adventurous - both savoury and refreshing at the same time - version of a simple salad with Greek summer aroma.

Ingredients (serves 4):
  • ¼ watermelon (about 16 triangles)
  • 250 gr Greek feta cheese (about 2 -3 pieces per serving)
  • 1 small red onion
  • 80 ml olive oil
  • 2 tbs red wine vinegar
  • ¼ tsp  salt
  • ¼ tsp fresh pepper
  • extra fresh pepper and flaked sea salt for serving

Instructions:
  1. Remove the rind and pips from the watermelon and cut it into 1 cm triangle chunks.
  2. Cut large pieces of Greek feta cheese (preferably in triangles).
  3. Slice the red onion into fine half moons.
  4. Whisk  together the vinegar, olive oil, ¼ tsp  salt, ¼ tsp fresh pepper and set aside.
  5. On a platter, layer the watermelon wedges, Greek feta cheese and red onion on top.
  6. Pour the olive-vinegar dressing over the salad.
  7. Add freshly grounded pepper and flaked sea salt (if needed).
  8. Serve immediately.
Tips:
  • Choose a small watermelon without many seeds.
  • Keep the watermelon in the fridge for a few hours before cutting it.
  • The salad pairs nicely with crushed almonds and mint.
  • Prefer freshly grounded, high quality salt, like kosher, and freshly grounded pepper to elevate the dish.
  • Always check the saltiness of the feta cheese before adding extra salt to the salad.
  • Serve while the watermelon is cool.
  • Enjoy the watermelon salad with a glass of a chilled rose wine, that balances the complex character of a red wine, with the crispiness of a white .
Enjoy!

Tips:
